Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup carrots, finely grated
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. In a bowl, mix lime juice, olive oil, garlic, cumin, paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. In a medium saucepan, bring chicken broth to a boil. Add rice and grated carrots, stir, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender and liquid is absorbed.
  3. While the rice is cooking, heat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked through.
  4. Fluff the carrot rice with a fork and serve it on plates. Slice the grilled chicken and place it on top of the rice.
  5. Garnish with chopped cilantro and serve with lime wedges on the side.
