Ingredients:

  • 2 large russet potatoes
  • 1 can black beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 ripe avocado, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the russet potatoes into thin wedges or sticks to resemble fries.
  3. In a large bowl, toss the potato wedges with olive oil, cumin, paprika, salt, and pepper until well coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes, flipping halfway through, until golden and crispy.
  6. While the fries are baking, prepare the black beans by heating them in a small saucepan over medium heat. Add the minced garlic and cook for about 3-4 minutes until fragrant.
  7. Once the fries are done, remove them from the oven and let them cool slightly.
  8. To serve, layer the fries on a platter, top with the garlic black beans, and add the diced avocado.
  9. Garnish with fresh cilantro and serve with lime wedges on the side.
