Ingredients:

  • 12 oz rotini pasta
  • 1 lb ground beef
  • 1 cup sweet corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula.
  4. Stir in the garlic powder, onion powder, salt, and pepper. Cook for an additional 2 minutes.
  5. Add the sweet corn, ranch dressing mix, sour cream, and beef broth to the skillet. Mix well and let it simmer for about 5 minutes.
  6. In a large mixing bowl, combine the cooked rotini pasta with the beef and corn mixture. Stir in half of the shredded cheddar cheese.
  7. Transfer the mixture into a greased 9x13 inch baking dish. Top with the remaining cheddar cheese and breadcrumbs if using.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving.
