Ingredients:

  • 1 bag tortilla chips
  • 1 cup refried beans
  • 1 cup ground beef
  • 1 cup chorizo, casing removed
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Jalapeños (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef and chorizo until browned. Drain excess fat and season with chili powder, cumin, salt, and pepper. Set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
  4. Gradually whisk in the milk and bring to a simmer, stirring constantly until thickened.
  5. Add shredded cheese to the sauce, stirring until melted and smooth. Season with salt and pepper.
  6. On a large baking sheet, spread the tortilla chips evenly. Spoon the refried beans over the chips, followed by the meat mixture.
  7. Pour the cheese sauce generously over the nachos. Top with diced red onion and jalapeños if using.
