Ingredients:

  • 4 medium potatoes, diced
  • 1 pound ground beef
  • 1 smoked sausage, sliced
  • 4 strips of bacon, chopped
  • 1 cup sour cream
  • 1 cup pepper jack cheese, shredded
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside.
  2. In the same skillet, add the ground beef and cook until browned. Drain excess fat if necessary.
  3. Add the sliced smoked sausage, chopped onion, and minced garlic to the skillet. Sauté until the onions are soft.
  4. Stir in the diced potatoes, paprika, salt, and pepper. Cover and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
  5. Once the potatoes are cooked, reduce the heat to low and mix in the sour cream and half of the pepper jack cheese, stirring until well combined.
  6. Sprinkle the remaining cheese on top and cover until melted.
  7. Serve hot, garnished with crispy bacon and chopped green onions.
