Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1/2 teaspoon cinnamon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.
  2. In a large bowl, combine the rolled oats, almond milk, applesauce, honey, and almond extract. Mix well and let it sit for about 10 minutes to allow the oats to absorb the liquid.
