Ingredients:

  • 1 medium head of cauliflower, grated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup low-carb marinara sauce
  • 1 cup fresh mozzarella cheese, sliced
  • Fresh basil leaves for garnish
  • Optional toppings: pepperoni, bell peppers, mushrooms, olives

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Grate the cauliflower using a food processor or box grater until it resembles rice. Steam or microwave the grated cauliflower for about 5 minutes until softened, then let it cool.
  3. Once cooled, place the cauliflower in a clean kitchen towel and wring out as much moisture as possible.
  4. In a large mixing bowl, combine the drained cauliflower, shredded mozzarella, Parmesan cheese, eggs, oregano, garlic powder, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/4 inch thick.
  6. Bake the crust in the preheated oven for 20-25 minutes until golden brown and crispy.
  7. Remove the crust from the oven and spread the low-carb marinara sauce evenly over the top.
  8. Add the fresh mozzarella slices and any additional toppings of your choice.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
