Ingredients:

  • 2 medium zucchinis, grated
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh parsley (optional)
  • Olive oil for frying

Instructions:

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, eggs, almond flour, garlic powder, onion powder, salt, black pepper, paprika, and parsley. Mix well until all ingredients are combined.
  3. Heat a skillet over medium heat and add a drizzle of olive oil.
  4. Scoop about 2 tablespoons of the zucchini mixture for each fritter and flatten slightly in the skillet.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil before serving.
