Ingredients:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves
  • 2 medium zucchinis, spiralized into noodles
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Parmesan cheese, for garnish (optional)

Instructions:

  1. In a large skillet over medium-high heat, melt 1 tablespoon of butter.
  2. Season the steak pieces with salt, pepper, and thyme. Add to the skillet and sear until browned and cooked to your liking, about 3-4 minutes for medium rare.
  3. Remove the steak from the skillet and set aside, keeping it warm.
  4. In the same skillet, add the remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Add the spiralized zucchini noodles to the skillet, along with olive oil, lemon juice, and lemon zest. Toss to combine and cook for 2-3 minutes until the noodles are just tender.
  6. Return the steak bites to the skillet and toss everything together to combine well with the garlic butter sauce.
  7. Serve immediately, garnished with Parmesan cheese if desired.
