Ingredients:

  • 6 large eggs
  • 1/2 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers (red or green)
  • 1/4 cup chopped spinach
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the eggs, garlic powder, onion powder, salt, and pepper until well combined.
  3. Fold in the chopped turkey bacon, cheddar cheese, diced bell peppers, and spinach into the egg mixture.
  4. Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden on top.
  6. Remove from the oven and allow to cool for a few minutes before gently running a knife around the edges to release the egg bites from the tin.
  7. Serve warm or allow to cool completely before storing in an airtight container in the refrigerator.
