Ingredients:

  • 4 thin cut pork loin steaks
  • 3 tablespoons malt extract
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup butternut pumpkin, cubed
  • 1 cup sweet potato, cubed
  • 200g pasta (your choice)
  • 1 cup asparagus, trimmed
  • 3 cloves garlic, minced
  • 2 eggs
  • 1/2 cup cheese (grated, such as Parmesan or Cheddar)
  • 1 cup green beans, trimmed
  • 1 lemon (zested and juiced)
  • 1 cup corn (fresh or frozen)
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the broccoli, cauliflower, butternut pumpkin, sweet potato, asparagus, green beans, corn, carrots, and zucchini with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  3. While the vegetables are roasting, prepare the pork loin steaks. Heat a skillet over medium-high heat and add olive oil.
  4. Season the pork loin steaks with salt and pepper, then sear them in the skillet for about 3-4 minutes on each side until golden brown.
  5. Remove the pork from the skillet and add malt extract, scraping up any brown bits from the pan. Simmer for a minute to slightly thicken the glaze, then return the pork to the skillet, coating it with the glaze. Cook for an additional 2-3 minutes.
  6. Meanwhile, cook the pasta according to package instructions. Drain and return to the pot.
  7. In a small bowl, whisk together the eggs, lemon juice, lemon zest, and grated cheese. Pour this mixture over the cooked pasta and toss to combine. Allow the heat from the pasta to cook the eggs slightly, creating a creamy sauce.
  8. Serve the glazed pork loin steaks alongside the roasted vegetables and lemon pasta.
