Ingredients:

  • 4 large eggs
  • 1 can (14 oz) crushed tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Olive oil for cooking

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a medium skillet, heat a splash of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  3. Add the minced garlic, dried oregano, smoked paprika, salt, and pepper, and cook for another minute until fragrant.
  4. Stir in the crushed tomatoes and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
  5. Transfer the tomato mixture to a baking dish and create four wells in the sauce. Crack an egg into each well.
  6. Sprinkle the crumbled feta cheese on top of the eggs.
  7. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny.
  8. Remove from the oven and garnish with fresh parsley before serving.
