Ingredients:

  • 1 lb ground beef
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lemon, juiced

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  2. Add the diced carrot and bell pepper, cooking for another 5 minutes until softened.
  3. Stir in the ground beef, breaking it up with a spoon. Cook until browned and cooked through.
  4. Add the chickpeas, diced tomatoes (with their juice), cumin, smoked paprika, cinnamon, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce heat to low and cover. Let it cook for about 20 minutes to allow the flavors to meld.
  6. Stir in the fresh parsley, cilantro, and lemon juice just before serving.
