Mediterranean Beef and Egg Skillet

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 medium tomatoes, chopped
  • 1 cup okra, sliced
  • 2 eggs
  • 1 cucumber, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the chopped tomatoes, sliced okra, garlic powder, paprika, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.
  4. Make two wells in the beef and vegetable mixture and crack an egg into each well. Cover the skillet and cook for about 5-6 minutes, or until the eggs are cooked to your liking.
  5. Remove from heat and sprinkle diced cucumber and fresh parsley on top before serving.
