Mediterranean Carrot and Green Bean Salad with Feta

Ingredients:

  • 2 cups fresh green beans, trimmed
  • 2 cups carrots, julienned
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a pot of boiling salted water, blanch the green beans for 2-3 minutes until bright green and tender-crisp. Remove and immediately transfer them to an ice bath to stop cooking. Drain and set aside.
  2. In the same pot, blanch the julienned carrots for 2 minutes, then transfer them to the ice bath. Drain and set aside.
  3. In a large bowl, combine the blanched green beans, carrots, and sweet corn.
  4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  5. Pour the dressing over the vegetables and toss gently to combine.
  6. Fold in the crumbled feta cheese, being careful not to break it up too much.
  7. Garnish with chopped fresh parsley before serving.
