Ingredients:

  • 1 medium cauliflower, riced
  • 1 large egg, beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup baby spinach, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh basil leaves, for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a food processor, pulse the riced cauliflower until fine. Transfer to a clean kitchen towel and squeeze out excess moisture.
  3. In a bowl, combine the riced cauliflower, beaten egg, mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix until well combined.
  4. Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1/2 inch thick.
  5. Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
  6. Remove the crust from the oven and top with cherry tomatoes, spinach, red onion, and feta cheese.
  7. Return to the oven and bake for an additional 10 minutes, until the vegetables are tender.
  8. Garnish with fresh basil leaves before slicing and serving.
