Ingredients:

  • 1 lb ground chicken
  • 1 cup cooked white beans (such as cannellini or navy beans), mashed
  • 2 tbsp olive oil, plus more for drizzling
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 small buns (slider size)
  • Fresh arugula or spinach for topping
  • Sliced tomatoes for topping
  • Feta cheese, crumbled (optional)

Instructions:

  1. In a large bowl, combine the ground chicken, mashed beans, minced garlic, olive oil, oregano, paprika, salt, and pepper. Mix until just combined.
  2. Form the mixture into small patties, about the size of the buns.
  3. Heat a skillet or grill over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
