Ingredients:

  • 2 cups cooked brown rice
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, mix olive oil, garlic powder, oregano, paprika, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
  2. Heat a skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest.
  3. In the same skillet, add the sliced bell peppers, zucchini, and cherry tomatoes. Sauté for about 5-6 minutes until the vegetables are tender.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Squeeze lemon juice over the vegetables and stir to combine.
  5. Slice the cooked chicken and serve over a bed of brown rice. Top with the sautéed vegetables and garnish with fresh parsley.
