Ingredients:

  • 2 chicken breasts
  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • 1 white onion, sliced
  • 1 cup white mushrooms, sliced
  • 4 small white potatoes, halved
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced red bell pepper, carrots, white onion, white mushrooms, and halved small white potatoes.
  3. Drizzle the vegetables with olive oil, and sprinkle with oregano, garlic powder, salt, and pepper. Toss until everything is well coated.
  4. Place the chicken breasts in the center of a large baking dish and surround them with the seasoned vegetables.
  5. Drizzle a little more olive oil over the chicken and season with additional salt and pepper.
