Ingredients:

  • 4 chicken breasts
  • 1 can diced tomatoes (14 oz)
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the diced potatoes, chopped onion, and celery. Drizzle with olive oil and season with salt, pepper, oregano, and basil. Toss to coat evenly.
  3. Place the chicken breasts on top of the vegetable mixture. Season the chicken with salt, pepper, and additional oregano and basil if desired.
  4. Pour the canned diced tomatoes over the chicken and vegetables, spreading it evenly.
  5. Cover the baking dish with aluminum foil and bake for 30 minutes.
  6. Remove the foil, add the broccoli florets, and bake for an additional 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Garnish with fresh parsley before serving.
