Ingredients:

  • 4 boneless, skinless chicken cutlets
  • 2 cups fresh spinach, washed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup diced tomatoes (fresh or canned)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions:

  1. Season the chicken cutlets with salt, pepper, oregano, and basil on both sides.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken cutlets and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the cannellini beans and diced tomatoes, and cook until heated through, about 2 more minutes. Drizzle with lemon juice and mix well.
  5. Serve the chicken cutlets topped with the spinach and cannellini bean mixture.
