Ingredients:

  • 1 lb ground chicken
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine ground chicken, onion, garlic, parsley, mint, cumin, coriander, paprika, salt, pepper, breadcrumbs, and beaten egg. Mix until well combined.
  2. Shape the mixture into oval kofta shapes (about 2 inches long) and place them on a baking sheet.
  3. Preheat your grill or grill pan over medium heat. Cook the kofta for about 5-7 minutes on each side, or until fully cooked and browned.
  4. While the kofta is cooking, prepare the tzatziki sauce. In a bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic, salt, and pepper until smooth. Adjust seasoning to taste.
  5. Serve the chicken kofta warm with a generous dollop of tzatziki sauce on the side.
