Ingredients:

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 cups fresh spinach, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 8 ounces pasta (penne or fusilli works well)
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken pieces to the skillet, season with salt, pepper, and oregano. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Add the sliced bell peppers and mushrooms to the skillet. Cook for another 4-5 minutes until the vegetables are tender.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  6. Combine the cooked pasta with the chicken and vegetable mixture. Toss well to combine.
  7. Remove from heat and fold in the crumbled feta cheese.
  8. Serve warm, garnished with fresh basil if desired.
