Ingredients:

  • 2 boneless, skinless chicken breasts
  • 8 oz whole wheat pasta
  • 2 cups cherry tomatoes, halved
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon lemon juice
  • Parmesan cheese for serving (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Season the chicken breasts with black pepper and oregano. Add them to the skillet and cook for about 6-7 minutes on each side or until the chicken is cooked through and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing.
  5. In the same skillet, add the halved cherry tomatoes and cook for about 3-4 minutes until they start to soften.
  6. Add the cooked pasta to the skillet along with the sliced chicken, red pepper flakes (if using), lemon juice, and fresh basil. Toss everything together until well combined and heated through.
  7. Serve with a sprinkle of Parmesan cheese if desired.
