Ingredients:

  • 2 cups shredded rotisserie chicken
  • 1 cup sundried tomatoes, chopped
  • 1 can (14 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 cup marinara sauce
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chopped sundried tomatoes, canned diced tomatoes (with juices), chicken broth, and marinara sauce to the pot. Stir well to combine.
  4. Bring the mixture to a simmer and add the shredded rotisserie chicken.
  5. Season with dried oregano, dried basil, salt, and pepper. Let it simmer for 20 minutes to allow the flavors to meld.
  6. Taste and adjust seasoning if necessary. If the stew is too thick, add a bit more chicken broth.
