Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 bell peppers (red and yellow), sliced
  • 1 cup mushrooms, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat.
  3. Season the chicken thighs with salt, pepper, oregano, paprika, and cumin.
  4. Sear the chicken thighs, skin side down, for 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced onions and garlic, sautéing for 2-3 minutes until translucent.
  6. Add the sliced bell peppers and mushrooms to the skillet, cooking until softened, about 5 minutes.
  7. Stir in the kalamata olives and nestle the chicken thighs back into the skillet.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  9. Remove from the oven and sprinkle with crumbled feta cheese and fresh parsley before serving.
