Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 bell peppers (red and yellow), sliced
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • Fresh parsley for garnish
  • Juice of 1 lemon

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, oregano, smoked paprika, cumin, salt, and pepper. Add the chicken thighs and coat well. Let marinate for at least 30 minutes.
  3. In a baking dish, toss the diced potatoes with a tablespoon of olive oil, salt, and pepper. Spread them out evenly.
  4. Place the marinated chicken thighs on top of the potatoes and surround them with the sliced bell peppers.
  5. Drizzle the lemon juice over the chicken and vegetables.
  6. Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
  7. Garnish with fresh parsley before serving.
