Ingredients:

  • 2 chicken breasts
  • 1 cup rainbow carrots, sliced
  • 1/2 cup labneh
  • 2 tablespoons zatar
  • 1 cup celery, chopped
  • 1/4 cup olive tapenade
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, zatar, salt, and pepper. Coat the chicken breasts in the mixture.
  3. Place the chicken breasts on a baking sheet and surround them with the sliced rainbow carrots.
  4. Roast in the preheated oven for 20-25 minutes or until the chicken is cooked through and the carrots are tender.
  5. While the chicken and carrots are roasting, prepare the labneh sauce by mixing labneh with a pinch of salt and a drizzle of olive oil.
  6. Once cooked, remove the chicken and carrots from the oven. Let the chicken rest for a few minutes before slicing.
  7. Serve the sliced chicken on a plate, topped with olive tapenade, alongside the roasted rainbow carrots and a dollop of labneh sauce. Garnish with chopped celery for added crunch.
