Ingredients:

  • 4 chicken thighs, boneless and skinless
  • 1 cup plain yogurt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, mix yogurt, olive oil, minced garlic, cumin, paprika, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes, preferably overnight.
  2. Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake for 25-30 minutes, or until cooked through and golden brown.
  3. While the chicken is baking, steam the broccoli florets until tender, then chop finely.
  4. In a pan, sauté the chopped onion in a little olive oil until translucent. Add the cooked rice and chopped broccoli, mixing well. Season with salt and pepper and a squeeze of lemon juice.
  5. For the garlic yogurt sauce, combine the remaining yogurt with minced garlic, a squeeze of lemon, and salt in a small bowl. Mix until smooth.
  6. Serve the baked chicken over the broccoli rice, drizzled with the garlic yogurt sauce, and garnish with fresh parsley.
