Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1/2 teaspoon cumin
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them out in a single layer.
  3. Roast the chickpeas in the preheated oven for 25-30 minutes, or until crispy, stirring halfway through.
  4. While the chickpeas are roasting, prepare the vegetables: combine cherry tomatoes, cucumber, bell pepper, and red onion in a large bowl.
  5. In a small bowl, whisk together tahini, lemon juice, water, cumin, and a pinch of salt until smooth. Adjust the consistency with more water if needed.
  6. Once the chickpeas are done, remove them from the oven and let cool slightly.
  7. To serve, divide the vegetable mixture into bowls, top with roasted chickpeas, drizzle with tahini dressing, and sprinkle with feta cheese and fresh parsley.
