Ingredients:

  • 1 cup durum wheat
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the durum wheat under cold water and drain.
  2. In a pot, bring water or vegetable broth to a boil. Add the durum wheat, reduce heat to low, cover, and simmer for about 10-12 minutes until tender. Drain any excess liquid and let it cool.
  3. In a large bowl, combine the cooled durum wheat, cherry tomatoes, cucumber, bell pepper, red onion, olives, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
