Ingredients:

  • 2 fillets of salmon
  • 2 fillets of white fish (such as cod or tilapia)
  • 1 cup jasmine rice
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh dill (chopped)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice and vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
  2. While the rice is cooking, season the fish fillets with salt, pepper, paprika, and cumin. Heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Then, add the salmon fillets skin-side down and cook for about 4-5 minutes. Flip the fillets and add the white fish to the skillet, cooking for another 3-4 minutes until the fish is cooked through and flakes easily.
  4. Once the rice is done, fluff it with a fork and stir in lemon zest, lemon juice, chopped parsley, and dill. Season with salt and pepper to taste.
  5. Serve the fish on a bed of herbed rice, garnished with additional herbs and lemon wedges if desired.
