Ingredients:

  • 2 fillets of white fish (such as cod or haddock)
  • 2 large eggs
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the sliced zucchini, diced bell pepper, cherry tomatoes, and onion. Drizzle with olive oil and sprinkle with salt, pepper, oregano, and paprika. Toss to coat the vegetables evenly.
  3. Place the fish fillets on top of the vegetables. Drizzle with lemon juice and zest.
  4. Make two small wells in the vegetable mixture, and carefully crack an egg into each well.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the eggs are set to your liking.
  6. Remove from the oven and garnish with fresh parsley before serving.
