Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely diced
  • 1 clove garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the eggs, salt, and pepper until frothy.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Add the diced red onion and sauté until translucent.
  4. Stir in the minced garlic and chopped spinach, cooking until the spinach wilts.
  5. Add the chopped sundried tomatoes and fresh basil to the skillet, mixing well.
  6. Pour the whisked eggs over the vegetables in the skillet, gently stirring to combine. Cook for about 2-3 minutes until the edges begin to set.
