Ingredients:

  • 1 cup rice (any variety)
  • 200g halloumi cheese, sliced
  • 2 carrots, julienned
  • 1 bell pepper (red or yellow), sliced
  • 2 spring onions, chopped
  • 1 cup broccoli florets
  • 1 cup kale, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

  1. Cook the rice according to package instructions. Set aside once cooked.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spring onions, carrots, and bell pepper. Sauté for about 5 minutes until slightly softened.
  3. Add the broccoli and kale to the skillet. Continue to cook for another 3-4 minutes until the vegetables are tender but still vibrant.
  4. In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the halloumi slices and cook for about 2-3 minutes on each side until golden brown and crispy.
  5. Once the vegetables are cooked, stir in the cooked rice, smoked paprika, salt, and pepper. Mix well to combine all the flavors.
  6. Serve the rice and vegetable mixture in bowls, topped with the grilled halloumi and a squeeze of fresh lemon juice for added brightness.
