Ingredients:

  • 1 lb lamb mince
  • 2 cups shredded cooked chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lemon

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the lamb mince to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the diced red bell pepper and zucchini, cooking until the vegetables are tender, about 4-5 minutes.
  4. Add the shredded chicken, cumin, smoked paprika, cinnamon, salt, and pepper. Mix well and cook for an additional 3-4 minutes until heated through.
  5. Remove from heat, and stir in fresh parsley and a squeeze of lemon juice. If desired, sprinkle with crumbled feta cheese before serving.
