Ingredients:

  • 500g lamb mince
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cooked quinoa or rice
  • 1 cup diced tomatoes
  • 1 cup cucumber, grated
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  2. Add the lamb mince to the skillet, breaking it apart with a wooden spoon. Cook until browned.
  3. Stir in the cumin, coriander, paprika, salt, and pepper. Cook for another 5-7 minutes until the spices are fragrant and the lamb is cooked through.
  4. In a bowl, combine the grated cucumber, Greek yogurt, lemon juice, dill, and salt to make the tzatziki. Mix well and set aside.
  5. To assemble, place a serving of cooked quinoa or rice in a bowl, top with the lamb mince, and garnish with diced tomatoes and a generous dollop of tzatziki.
