Ingredients:

  • 500g lamb mince
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup diced tomatoes
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions:

  1. In a mixing bowl, combine the lamb mince with cumin, coriander, paprika, salt, and pepper. Mix well until the spices are evenly distributed.
  2. Heat olive oil in a skillet over medium heat. Add the lamb mixture and cook for about 8-10 minutes, breaking it apart with a spatula until browned and cooked through.
  3. While the lamb is cooking, prepare the tzatziki sauce. In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt. Stir until well combined and set aside.
  4. Once the lamb is cooked, remove it from heat and let it rest for a couple of minutes.
  5. To assemble the bowls, start with a base of the cooked lamb mince, top with diced tomatoes, and a generous dollop of tzatziki sauce.
