Ingredients:

  • 500g lamb knuckle, cut into chunks
  • 2 diced tomatoes in tins
  • 100g olives, pitted and halved
  • 1 carrot, diced
  • 5 cloves of garlic, minced
  • 2 leeks, sliced
  • 2 celery stalks, diced
  • 4 cups of beef or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the lamb knuckle pieces and sear until browned on all sides.
  2. Add the minced garlic, diced carrot, sliced leeks, and diced celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften.
  3. Stir in the diced tomatoes, olives, dried oregano, paprika, salt, and pepper. Mix well to combine all the flavors.
  4. Pour in the broth, ensuring that the lamb and vegetables are covered. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  5. Simmer the stew for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally and add more broth if needed.
  6. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
