Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 1 cup fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.
  3. Add the chicken breasts to the pot and pour in the chicken broth. Stir in the diced tomatoes, oregano, thyme, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for about 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Stir in the lemon juice, lemon zest, spinach, and parsley. Let the soup simmer for an additional 5 minutes to allow the flavors to meld.
  7. Taste and adjust seasoning if necessary before serving.
