Ingredients:

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 head of romaine lettuce, leaves separated
  • Fresh parsley for garnish

Instructions:

  1. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Pour the dressing over the quinoa mixture and toss gently to combine.
  4. Take a romaine lettuce leaf and spoon a generous amount of the quinoa mixture into the center.
  5. Fold the sides of the lettuce leaf over the filling and secure with a toothpick if necessary.
  6. Repeat with the remaining lettuce leaves and filling.
  7. Garnish with fresh parsley and serve immediately.
