Ingredients:

  • 1 pound ground beef or lamb
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Add ground meat to the skillet, breaking it apart with a spoon. Cook until browned and cooked through.
  4. Stir in cherry tomatoes, broccoli, yellow and orange bell peppers, oregano, thyme, salt, and pepper. Cook for another 5 minutes until the vegetables are slightly tender.
  5. Transfer the meat and vegetable mixture to a baking dish. Drizzle with balsamic vinegar and mix well.
  6. Sprinkle crumbled feta cheese evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the feta is slightly golden.
  8. Remove from oven, let cool slightly, and serve warm.
