Ingredients:

  • 12 oz pasta (your choice, such as spaghetti or penne)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and carrot, and sauté until softened, about 5 minutes.
  3. Add the sliced mushrooms and minced garlic to the skillet, cooking until the mushrooms are browned and tender, about 5-7 minutes.
  4. Stir in the halved cherry tomatoes, and cook until they begin to soften and release their juices, about 3-4 minutes.
  5. Add the cooked pasta to the skillet, along with the reserved pasta water, chopped basil, salt, pepper, and red pepper flakes if using. Toss everything together until well combined and heated through.
  6. Serve the pasta warm, topped with freshly grated Parmesan cheese and additional basil if desired.
