Ingredients:

  • 300g pasta (penne or fusilli)
  • 200g mozzarella cheese, shredded
  • 100g feta cheese, crumbled
  • 50g parmesan cheese, grated
  • 1 large onion, finely chopped
  • 250g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 can (400g) tinned tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the garlic and sliced mushrooms to the skillet, cooking until the mushrooms are golden and soft, about 5-7 minutes.
  5. Stir in the tinned tomatoes and season with salt and pepper. Let simmer for 10 minutes to allow the flavors to meld.
  6. In a large mixing bowl, combine the cooked pasta, sautéed vegetables, mozzarella, and feta. Mix until well combined.
  7. Transfer the mixture to a baking dish. Sprinkle the grated parmesan on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
