Ingredients:

  • 1 bottle of Italian dressing
  • 1 cucumber, diced
  • 1 pint of cherry tomatoes, halved
  • 8 oz of crumbled feta cheese
  • 14 oz of pasta (your choice, such as fusilli or penne)

Instructions:

  1. Cook the pasta according to the package instructions in a pot of boiling salted water until al dente.
  2. While the pasta is cooking, dice the cucumber and halve the cherry tomatoes. Place them in a large mixing bowl.
  3. Once the pasta is cooked, strain it and rinse under cold water to stop the cooking process. Allow it to drain for 10-15 minutes.
  4. Add the drained pasta to the bowl with the cucumbers and tomatoes.
  5. Pour half the bottle of Italian dressing over the pasta mixture and toss to combine thoroughly. Cover and refrigerate for a minimum of 30 minutes to allow the flavors to meld.
  6. When ready to serve, top the salad with crumbled feta cheese and drizzle with the remaining Italian dressing. Toss gently before serving.
