Ingredients:

  • 8 oz pasta (penne or fusilli)
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, sliced (Kalamata or green)
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped sun-dried tomatoes and olives to the skillet, cooking for another 2-3 minutes.
  4. In a large bowl, combine the cooked pasta, the sautéed mixture, crumbled feta, fresh basil, and parsley.
  5. Drizzle with lemon juice and season with salt, pepper, and red pepper flakes if desired. Toss everything together until well mixed.
  6. Serve warm or at room temperature, garnished with extra herbs if desired.
