Ingredients:

  • 2 pork chops
  • 1 cup cooked lentils (green or brown)
  • 1 cup canned cannellini beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)

Instructions:

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, salt, and pepper. Mix well and set aside.
  3. Brush the pork chops with the marinade and let them sit for about 15 minutes to absorb the flavors.
