Ingredients:

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 medium tomatoes, diced
  • 1 medium cucumber, diced
  • 1/4 red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, garlic, oregano, paprika, salt, and pepper to create a marinade.
  3. Rub the marinade all over the pork tenderloin and let it sit for at least 30 minutes.
  4. Place the marinated pork tenderloin on a baking sheet and roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  5. While the pork is cooking, prepare the salad by combining diced tomatoes, cucumber, red onion, parsley, and lemon juice in a bowl. Season with salt and pepper to taste.
  6. Once the pork is done, let it rest for 5-10 minutes before slicing.
  7. Serve the sliced pork tenderloin alongside the tomato-cucumber salad.
