Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, chickpeas, parsley, olives, and feta cheese (if using).
  3. In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and pepper until smooth.
  4. Add the cooked quinoa to the vegetable mixture and drizzle with the lemon-tahini dressing. Toss gently to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes for a refreshing cold bowl.
