Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water) and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
  2. In a large bowl, combine the cooked quinoa, chickpeas, diced red bell pepper, cucumber, cherry tomatoes, red onion, and chopped parsley. Toss gently to combine.
  3. In a small bowl, whisk together the olive oil, tahini, lemon juice, orange juice, garlic powder, salt, and pepper until smooth. Adjust seasoning to taste.
  4. Drizzle the citrus tahini dressing over the quinoa and chickpea mixture, and toss gently to coat all ingredients evenly.
  5. Serve the bowl at room temperature or slightly chilled, garnished with extra parsley if desired.
